Ingredients

Potatoes & Boiling Liquid
  • 4 lbs Yukon Gold potatoes 1.8 kg, sliced into 1/2-inch thick pieces
  • 4 cloves fresh garlic peeled and lightly smashed (optional)
  • 1 tbsp Diamond Crystal kosher salt 8 g, for cooking water plus more to taste
Warm Dairy & Seasoning
  • 0.5 cup Kerrygold unsalted butter 113 g, cut into small cubes
  • 0.75 cup Organic Valley whole milk 180 ml (or heavy cream)
  • 0.25 tsp ground black pepper freshly cracked, to taste

Equipment

  • Large stockpot Boils potato slices evenly
  • Chef knife Cuts clean potato slices
  • Colander Drains hot cooking water safely
  • Potato ricer Makes silky lump-free mash
  • Wooden spoon Folds warm dairy gently

Method

Prep & Boil
  1. Wash potatoes cleanly and cut them into half-inch thick slices. Place sliced potatoes, peeled garlic cloves, and one tablespoon of kosher salt into a large stockpot.
  2. Cover potatoes with cold tap water two inches above the pieces. Bring to a rapid boil over high heat and cook for 10 minutes until fork-tender.
Drain & Steam Dry
  1. Drain potatoes and garlic in a colander. Return the pot to low burner heat for one minute to steam off excess water until potato surfaces turn dry and chalky.
Warm Dairy & Mash
  1. Combine butter cubes and whole milk in a dish. Microwave for two minutes until butter completely melts and milk is hot.
  2. Pass warm potato pieces and boiled garlic through a potato ricer into a bowl. Gently fold in warm melted butter mixture and cracked black pepper with a wooden spoon until smooth and fluffy. Serve immediately.

Notes

Always start potatoes in cold tap water so they cook evenly from edge to center. Steam drying drained potatoes on the stove removes excess water and ensures maximum butter absorption without gummy texture.
