Ingredients

Boiled Eggs & Cooking Liquid
  • 6 large eggs older eggs, peeled
  • 2 tsp Diamond Crystal kosher salt 10 g, for boiling water plus more to taste
  • 2 tsp Heinz distilled white vinegar 10 ml, for boiling water
Creamy Yolk Filling & Garnish
  • 3 tbsp Best Foods real mayonnaise 45 ml
  • 1.5 tsp Grey Poupon Dijon mustard 7.5 ml
  • 1 tsp Heinz distilled white vinegar 5 ml, for filling
  • 0.25 tsp ground black pepper freshly cracked, to taste
  • 0.25 tsp McCormick ground paprika for dusting garnish

Equipment

  • Medium saucepan Boils eggs evenly
  • Slotted spoon Lifts eggs from water
  • Large bowl Ice water bath
  • Fine mesh sieve Removes yolk lumps
  • Piping bag Pipes fluffy rosettes

Method

Boil & Ice Bath
  1. Place six eggs into a medium saucepan. Add two teaspoons of salt, two teaspoons of vinegar, and cold water covering eggs by two inches. Bring to a rolling boil over high heat, then cook for exactly seven minutes.
  2. Transfer hot eggs with a slotted spoon directly into an ice water bath. Let them chill for ten minutes to stop internal cooking and loosen outer shells.
Peel & Slice
  1. Gently tap eggs on your counter and peel shells under cool running water. Slice each egg in half lengthwise with a sharp knife and pop yolks into a mixing bowl.
Blend & Pipe Filling
  1. Mash yolks with mayonnaise, Dijon mustard, one teaspoon of vinegar, salt, and black pepper. Press mixture through a fine mesh sieve for a lump-free texture.
  2. Spoon silky filling into a piping bag with an open star tip. Pipe swirls into egg white halves and garnish with a dusting of paprika and black pepper. Serve chilled.

Notes

Always use week-old eggs from your refrigerator for clean peeling. Passing mashed yolks through a fine mesh sieve guarantees silky smooth filling that never clogs piping tips.
